Add the remaining ingredients and bring to a boil, boiling until the vegetables are tender.
Puree soup with an immersion blender or pour the soup carefully into a blender & puree.
Season & serve.
Texture Tip: We like to clean this soup to make it completely smooth. If you like a little texture, remove the onions before cleaning the soup, chop and return to the pot.

What to Serve With Soup
Sprinkle with fried onions, herbs, or croutons. Fresh Parmesan is an excellent addition.

The onion soup cream is best stored in the refrigerator in a covered container for up to 4 days. Freeze the parts in zipped bags with a date marked on the outside for up to 4 weeks. Heat the soup again on the stovetop and serve.
